Veggie pasta with zucchini noodles 

SO MANY VEGGIES and proud.

I made this one tonight. I’m not going to lie I probably make it once a week especially lately because I’m trying to practice my being a pescatarian skills. Anyways it’s so easy, fills us up, and makes me FEEL good. No remorse of what I had and hi PASTA!

You can really do any type of veggies you like. Tonight this is what I did. I had some arugula I needed to use before it got bad, so I added that in and mushrooms have been tasting super good in this lately. Kind of meats it up a little without the actual meat. ;) also had some broccoli that’s been in the fridge for a few days so threw that in there. 

 

What you need

1-2 cup mushrooms  (I got some fresh ones from the farmers market)

Handful Arugula 

Head of Broccoli 

2 Onions

Some veggie noodles. (Sweet potato and zucchini noodles are my go to’s)

Tomatoes (depends if I have some in the fridge) 

Few cloves of garlic

Pesto 

 

Start by heating olive oil in a skillet and then put the chopped garlic in the pain until it heats up until fragrant but not brown

I chop up all the veggies to bite size pieces and start sautéing then. I put onions and broccoli in first and then add the mushrooms, and finally at the very end added the arugula. 

While I’m sautéing the veggies I have the water boiling and drop the veggie noodles in, for just a moment, then strain them.

I add the veggie noodles to the deep sauté pan and add the arugula in. I then Toss is all together!

Fish stew.

I have to admit, this is Garretts recipe. He gets full credit for this delish dish. I also want to add it’s just stew but the way he did it was so yummy and flavorful. I don’t know EXACTLY what he did, but I can guess pretty good. 

He used the crock pot to make this stew. And this dish is not vegetarian.

He used

1 lb of Cod (white, light flakey fish)

1 1/2 cups of chopped Kale

4 carrots chopped

2 onions 

1 1/2 cups of fingerling potatoes

1 quart Chicken/veggie broth

chorizo cut into bite size pieces 

Herbs of your liking!

Again all these things are interchangeable and you can use how much you need for your family. I’m not positive these are the exact measurements of each thing in the stew, but making a rough guess.

Pretty much the simplest thing you can do.

Throw all the chopped veggies, fish, and chorizo in the slow cooker. Add the broth of your choice. And maybe a cup of water if it starts to get dry. We put the heat on low and let it cook for 5 hours. 

Salt and pepper to taste.

Sometimes I’m always struggling to quickly throw something up for dinner after we’ve been out for the afternooon. However, this recipe is a great alternative. I whip it up during Lewis nap.
